Years ago I started baking with honey. Unfortunately, I didn't know about these 4 simple tricks at first, so I had multiple flops. It is not as simple as just swapping the sugar for honey in your recipes. But it is quite simple to follow these 4 quick tricks once you know about them. Now, I can honestly say that I love trying new baking recipes with honey rather than sugar. As these 4 tricks are a game changer and make some really beautiful goodies. Okay, here are the four simple tricks: One: Decrease your baking (oven) temperature by 25 degrees F. This will prevent your goodies from browning too fast. Honey caramelizes quicker than sugar. Two: Rather than trying a direct swap, whenever a recipe calls for 1 cup of sugar, use 1/3 to 1/2 a cup of honey. Honey is sweet and depending on the type, can be 2-3 times as sweet as white sugar. Three: When you use 1 cup of honey, decrease the other liquids in the recipe by 1/4 cup. Honey is made of 25% water. If your recipe doesn't include other liquids, just increase the amount of flour by 2 tablespoons per 1 cup of honey. Four: For each 1 cup of honey, add 1/4 teaspoon of baking soda. If your recipe already calls for baking soda, you don't need to worry about adding more. Honey is acidic and baking soda helps neutralize it. It really is that simple. Enjoy you healthy baking.
